Story:
Just visited Italy - the birthplace of Pizza - so I thought it is perfect timing for updating my blog with the Desi Pizza recipe.. :-) - ok... I guess I really don't have a story for this recipe. But just like other recipes on this blog - it is tried and tasted by many.. Friends have asked for the recipe - so here it is..

Time: 2 hrs
Ingredients:
- 1/2 Green pepper - cut 1x1 inch squares
- 1/2 Red pepper - cut 1x1 inch squares
- 1 big Onion - cut 1x1 inch squares
- 1 Corn - roast and remove kernels
- 1/2 cup Pineapple chunks
- 1 cup full 1 inch Paneer cubes
- 1.5 cup Mixed shredded cheese - Mozzarella, Cheddar, Parmesan
- 1/2 Cup coriander leaves - finely chopped
- 1/2 tsp garlic paste
- 1/2 tsp ginger paste
- 1/2 tsp garam masala
- 2 - 12" Original Boboli Pizza Crusts
- Any ready made pizza tomatoe sauce
Heat 1 tbsp oil in a non-stick pan and add the ginger-garlic paste and chopped coriander leaves.
Once coriander leaves start turning darker, add Paneer cubes and mix well with the oil. Try not to break the Paneer cubes. Add garam masala, and salt, mix well. Let the Paneer cubes get charred a little on the surface. Keep the Paneer cubes aside.
If the pineapple chunks seem too big - cut them in smaller pieces.
Add chilli powder and salt to roasted corn kernels as per taste.
Heat 1 tbsp oil in the same pan and saute the cut mixed peppers and onions for 2-3 minutes or so. Just when the onions start turning brown - turn the heat off and keep the veggies aside.
With these ingredients - you can make two Pizzas:
Preheat the oven to 400 F.
1. Paneer Tikka Pizza - Spread tomatoe sauce on pizza crust, sprinkle the mixed grated cheese liberally (I LOVE cheese). Add sauted paneer cubes and mixed peppers, onions. Sprinkle some more cheese on top.
2. Corn and Pineapple Pizza - Spread tomatoe sauce on pizza crust, sprinkle the mixed grated cheese liberally (I LOVE cheese). Add small pineapple chunks and corn kernels. Sprinkle some more cheese on top.
Bake in the oven for 30 minutes or till the cheese melts completely.
