We have a Desi lunch group on the 3rd floor of AH3 in MathWorks talk :-).. I join the lunch group once in a while and keep talking about - you guessed right - food :-P. Karthik, one of the lunch group members brings this salad for lunch quite regularly.. After eyeing the salad for a few days I said to Karthik - that salad looks really good - what all do you put in it? Karthik got the hint and offerred me some of his salad. It had a crunchy, summery texture and a slightly creamy taste - it was a simple but delicious combo of fresh flavors.. I got the recipe and it was a superhit at a couple of BBQ parties this summer

Time: 1 hr
Ingredients:
- 1/2 cucumber
- 1/2 Onion
- 1/2 Red Pepper
- Few cherry tomatoes
- 1/2 cup boiled chick peas
- 1 boiled Beet root
- Sliced almonds
- My additions -Steamed, cut asparagus
- Salt, pepper to taste
- 1 tbsp of Ranch dressing
- 1/2 cup of tortilla chips
Cut the veggies into small squares (1/2 inch) or so. Mix veggies with salt, pepper and ranch dressing. Crush tortilla chips slightly to add as a garnish on top. Njoy!
