After much deep and profound brain things inside my head, [Madagascar] I have decided to call the whole thing off..
Why worry about such details when you can enjoy a grilled sandwich and a fruity cocktail on a nice sunny day...

Time: 20 minutes
Ingredients: for 3-4 sandwiches
- 6-8 Portobello Mushroom cups
- Sliced Sour dough bread
- 2-3 tbsp Olive Oil
- Italian seasoning (spice mix with basil, oregano, and other Italian herbs)
- Salt and Pepper to taste
- Slices of fresh Mozzarella cheese
Fire the grille and until it becomes hot enough (350F) lightly rub the olive oil, Italian seasoning, salt and pepper on the mushroom cups. Keep these covered for a few minutes.
Put some olive oil and herbs on the sour dough bread slices and keep them aside.
First put the mushroom caps on the grille until they start losing water and become somewhat flat. Now put the bread slices on the grille and add cheese slices on top of the mushroom caps.
Flip the bread once after you see brown grill-marks on one side.


As soon as the cheese starts melting - assemble the mushroom cap with cheese between the two slices of bread and enjoy with a fruity cocktail or with hot soup.
I like this recipe for its simplicity.. when I was looking up on the web I bumped into this one. It looks really yummy but elaborate.. may be I will give it a try next time.
