Time: 30 minutes
Ingredients: for 4 sandwiches
- 1 Avocado cut into thin slices
- 1/2 cup mint chutney
- Juice of half a lemon
- 1 medium to large onion cut into thin slices
- 1 red pepper cut into thin slices
- 1 tsp oil
- Panini style bread
- little bit butter (optional)
Smother the Avocado slices in chutney and lemon juice, keep aside. Heat a tsp of oil in a pan and saute the red pepper and onion slices till they caramelize. Add salt and pepper to taste and mix well.
That's it - make a sandwich with the panini bread slices, about 1 tbsp of the onion-pepper mixture and 2-3 slices of chutnified avocado.
Toast the sandwich in a pan with or without butter till the bread becomes golden brown.
Good twist to the pheeka avacado. Suggestion: For the picture, could you take a cross section picture too? I think it will be a good to see that too ;)
