Chutnified Avocado Panini

Story: Today's post is in Hinglish... for those who gungunao- 'Say na - say na how u saiditoomi'



What yaa.. eating Avocado is pukka healthy ha.. good fat I tell you. But tastes soo pheeka re.. no taste only. So total fundoo idea I got.. why not - chutney-fy the Avocado?

I to always keep chatpataa teekha chutney in the fridge.. Dubaofied the avocado pieces into the chutney with lots of neembu ka ras - made it totally chutnified.

Junta was super khush re.. matlab.. grilled panini mein spicy twist ho gaya na..

Time: 30 minutes

Ingredients: for 4 sandwiches
  • 1 Avocado cut into thin slices
  • 1/2 cup mint chutney
  • Juice of half a lemon
  • 1 medium to large onion cut into thin slices
  • 1 red pepper cut into thin slices
  • 1 tsp oil
  • Panini style bread
  • little bit butter (optional)
Recipe:

Smother the Avocado slices in chutney and lemon juice, keep aside. Heat a tsp of oil in a pan and saute the red pepper and onion slices till they caramelize. Add salt and pepper to taste and mix well.

That's it - make a sandwich with the panini bread slices, about 1 tbsp of the onion-pepper mixture and 2-3 slices of chutnified avocado.

Toast the sandwich in a pan with or without butter till the bread becomes golden brown.

  1. Good twist to the pheeka avacado. Suggestion: For the picture, could you take a cross section picture too? I think it will be a good to see that too ;)
